Chodakowska’s zucchini fritters

Everything related to Eve Chodakowska, hailed as the all Poles fitness trainer has been very trendy lately.

In fact her zucchini fritters are great, quick to prepare and unusually light, yet filling.

Serve it with Greek tzatziki sauce.

Chodakowska’s zucchini fritters
preparation time: 20-25 minutes
What do you need for 2 servings?
1 small zucchini (200 g) grated
1/2 onion, grated
1 egg
2 tablespoons flour
fresh herbs – I’ve used basil, thyme and oregano
2 cloves of garlic, grated
salt and pepper
olive oil for frying
tzatziki
1 glass of Greek yogurt
1 small cucumber, grated
1 tablespoons olive oil
salt and pepper
1/2 clove garlic, grated
What now?
1 Mix zucchini, onion, egg, flour, herbs, garlic and salt.
2 Fry thin fritters in hot oil, if you have teflon frying pan you may prepare them without fat.
3. Serve with tzatziki sauce.
