Spring is coming timidly, undecided whether to stay here or to extend its vacation in hot countries. Since, however, you can feel the upcoming warmness you should change your menu. Forget heavy winter foods and replace them with light, colorful vegetable based dishes that have already appeared on local markets.
In the latest issue of the magazine Kukbuk it was concluded that in the season, when the Polish fruit and vegetables reign in supermarkets it would be a shame to buy those exotic ones. So simply abandon all the pineapples, kiwi, avocado, etc. and recall the taste of Polish apples, strawberries, plums and other delicacies.
Spring salad with radish, feta cheese and sesame seeds
preparation time: 30 minutes
What do you need?
200 g of whole-wheat pasta, cooked al dente
5 broccoli florets,-cooked (I cook them with pasta)
bunch of radishes with leaves, washed,
radishes sliced in half
1 tomato, cut into quarters approximately
70 g feta cheese 12%, cut into cubes
1 1/2 tablespoons sesame seeds
dressing: 1/4 glass of olive oil
3 tablespoons water
1 clove garlic, crushed
1 teaspoon herbs de Provence
1. Mix all ingredients in a large bowl.
2. Roast the sesame seeds on a dry pan until lightly browned.
3. Serve sprinkled with sesame seeds and mixed with the dressing.
