Zucchini cake

Moist cake with zucchini with a pinch of cocoa, nuts, almonds and dried apricots. In order to prepare it you do not even need a mixer!


Zucchini Cake
preparation time: 20 minutes + 40 minutes baking
What do you need for the 30 cm (round) form?
2 cup grated, squeeze out of juice zucchini
2 1/4 glass wholemeal flour or plain flour
4 eggs
about 3/5 cup oil
1 teaspoon baking soda
2 vanilla stick or a pack of vanilla sugar
1 glass of sugar
1 teaspoon cinnamon
a handful of crushed walnuts
a handful of flaked almonds
handful of chopped dried apricots
2 tablespoons natural cocoa
What now?
1 Mix all ingredients with spatula.
2 Transfer to greased baking form and bake for about 40 minutes at 180 C – until dry stick.
3 Serve with powdered sugar.
