Naima’s paleo pancakes

Lazy Friday’s brunch is a great opportunity to try out this recipe for paleo pancakes that Naima – a friend of mine – came up with. Wheat and dairy free will provide you with a great dose of energy for the whole day. They taste heavenly good!

Naima’s paleo pancakes

for 2 servings

4 ripe bananas

2 eggs

1/2 tsp cinnamon

1/2 tsp nutmeg

3 tbsp fresh coconut, diced

handful of cashew nuts

handful of walnuts

4 dried dates, chopped

2 dried figs, chopped

 

oil for frying

 

Preparation:

  1. Mash bananas.
  2. Add eggs, spices and mix well.
  3. Crush nuts in a mortar and transfer to the batter. Stir in the rest of ingredients.
  4. Fry on both sides until golden brown.
  5. Serve with syrups or fruits of your choice.
