Carrot-turmeric tummy-soothing soup

Honestly speaking this is the best carrot soup I’ve ever made.

This soup will help on the days when your tummy feels upset. When your only dream is to get rid of the pain or stomach cramp turmeric will do its magic. Its anti-inflammatory substances dissolve in fat, therefore don’t forget to add some ghee or olive oil.

Additionally, cumin will cure any type of stomach problems related to indigestion. The soup is supposedly Moroccan in origin. It’s sweet and full of spices that will gently warm you up and bring relief from the cramps.

If you feel well garnish the top with some roasted sunflower seeds and a spoon of yogurt for additional twist. Lovely.

Carrot-turmeric tummy-soothing soup

Servings: 2

Ingredients

2tbls ghee

250 g carrots, peeled and chopped

100 g onions, peeled and finely chopped

3 cups of hot water

 

Spices:

1 tbsp turmeric

¼ tsp cumin seeds

5 cloves

1 cm cinnamon bark

5 allspice

1 bay leave

4 cardamon pods

 

Finishing

1 tblsp ghee

salt

roasted sunflower seeds

yogurt

 

Preparation:

  1. Heat the ghee in a pot, add the onion, then fry for 5 mins until softened and golden brown. Stir in the spices, then cook for 1 min. Add the carrots and water, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor, then blitz until smooth. Add 1 tbsp of the ghee and blitz again (why? Read more in my post on the perfect cream soup.) Return to pan, taste, add salt if necessary.
  3. Sprinkle with roasted sunflower seeds and garnish with yogurt before serving.

Tip: Flavor of this soup is build upon sweetness of onion. The more you saute it, meaning the more brown it is, the sweeter and more robust flavor you will get. Therefore, be patient with your onion, just stand next to the stove and fry it. Don’t burn, as it’s going to taste bitter. Good luck.
